Kale Quinoa Black Bean salad – A wholesome one pot salad that is crunchy, savory, bursting with flavor and is quick and easy to prepare!

 

I love homemade Chipotle bowls!  Especially when I am on the go, or when I’m just too tired and lazy to cook. Quinoa, black beans, corn, kale! What’s not to love?

The great thing about this Kale Quinoa Black Bean salad is that it’s pretty much a one-pot meal.  I’ve been experimenting with salads and soups that can be prepared with ease and simplicity. This salad is one such experiment–beans, whole grain, and vegetables–in one big bowl. A salad that contains protein, whole grain and vegetable that is quick and easy to prepare!

This spicy salad is crunchy, savory, bursting with flavor and totally addicting. A crowd-pleaser for sure. It’s the perfect salad for any occasion and can be customized to your “spiciness” liking.

All you do is cook the quinoa, then mix all the vegetables. Mix up the spicy dressing. Pour the dressing over the salad. Mix again. Done! The Kale Quinoa Black Bean salad can be eaten warm or cold – either way is absolutely delicious.

You can replace the quinoa with brown rice or any other cooked grain. Also, feel free to add any other vegetables as desired. If you don’t like kale, replace it with lettuce or spinach.

A wholesome one pot meal - salad with protein, whole grain and vegetables. This spicy salad is crunchy, savory, bursting with flavor and totally addicting

Servings: 4
Ingredients
  • 1 cup Quinoa uncooked
  • 2 cups Water
  • 5-6 cups Kale chopped
  • 1/2 Red Onion
  • 1 cup Corn
  • 1 cup Black Beans cooked
  • 1 small Tomato chopped
Dressing
  • 1 teaspoon Olive oil
  • 1/4 cup Cilantro chopped
  • 1 clove Garlic crushed, finely chopped
  • 1 teaspoon Sugar
  • Salt as required
  • 1/2 teaspoon Red chili powder
  • 1 lime juice
Instructions
  1. In a medium sized saucepan, combine the uncooked quinoa with 2 cups of water. Season with some salt and pepper and bring it to a boil. Lower the heat, cover and simmer for 15 minutes - until water is absorbed completely.

  2. Whisk the olive oil, cilantro, garlic, sugar, salt, pepper, red chilly powder and lime juice together in a bowl.
  3. In a bowl, combine the cooked quinoa, kale, tomato, black beans, corn and red onion together in a bowl. Pour dressing over the mixture. Mix well and refrigerate till ready to serve.
